Ingredients
  

For the Cake

  • 900 grams daikon radish, peeled and grated Make sure to squeeze out excess moisture for a firmer texture.
  • 180 grams rice flour
  • 55 grams cornstarch
  • 10 grams dried shrimp Soaked in hot water for 30 minutes, drained and finely chopped; optional.
  • 5 pieces dried mushrooms Soaked in hot water for 30 minutes.
  • 150 grams bacon, finely chopped Use uncured or any type preferred.
  • 2 teaspoons chicken powder Can use crushed bouillon cube as a substitute.
  • 1 tablespoon sugar Adjust based on the sweetness of the daikon.
  • 1 cup water Reserve juice for cake batter.
  • 2 cups saved mushroom and/or daikon broth
  • 3 cloves garlic, peeled and chopped
  • 2 pieces green onions, chopped
  • to taste white pepper

For the Zippy Dipping Sauce

  • 4 tablespoons soy sauce Tamari can be used for a gluten-free option.
  • 2 teaspoons Chinese black vinegar
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated Or 1/4 teaspoon dried ground ginger.
  • 1 piece chili pepper Can use a dash of dried red chili flakes, optional.

For Cooking

  • 2 tablespoons oil For pan frying.
  • cooking spray or oil For greasing the cake pan.
  • water For steaming.

Instructions
 

Preparation

  • Soak the dried mushrooms and optional dried shrimp in hot water for about 30 minutes. Drain and finely chop them.

Cook Daikon Radish

  • Grate the daikon radish and place it in a pot with 1 cup of water. Cook over medium heat until soft, about 10-15 minutes. Reserve the juice for later.

Stir Fry Bacon Mixture

  • In another pan, add the finely chopped bacon and sauté until crispy. Add the chopped garlic, green onions, and soaked mushrooms (and shrimp if using). Stir-fry for a few more minutes until fragrant.

Make Radish Cake

  • In a large bowl, combine the cooked daikon (with the reserved juice), rice flour, cornstarch, chicken powder, sugar, and white pepper. Mix in the stir-fried bacon mixture until well combined.

Steaming

  • Pour the mixture into a greased cake pan. Steam over boiling water for about 30-40 minutes or until the cake is firm.

Prepare Zippy Dipping Sauce

  • In a small bowl, mix soy sauce, black vinegar, minced garlic, ginger, and chili pepper.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. You can reheat the slices in a pan or microwave before serving again. Consider adding more spices or herbs to the bacon mixture for extra flavor.
