High Protein Lemon Dill Chicken Bowls

Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons fresh dill, chopped (or 1 teaspoon dried dill) Fresh is preferred for more flavor.
  • to taste Salt and pepper

For the Bowls

  • 1 cup cooked quinoa (or brown rice) Quinoa is preferred for higher protein content.
  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, diced
  • 1 piece bell pepper, diced
  • 1/4 piece red onion, thinly sliced
  • as needed Lemon wedges for serving

Instructions
 

Marinating the Chicken

  • In a bowl, mix lemon juice, olive oil, dill, salt, and pepper. Marinate chicken in this mixture for at least 30 minutes.

Cooking the Chicken

  • Preheat a grill or skillet over medium heat. Cook the marinated chicken for 5-7 minutes on each side until cooked through.
  • Once cooked, let the chicken rest for a few minutes before slicing.

Assembling the Bowls

  • In meal prep bowls, add quinoa as a base. Top with sliced chicken, cherry tomatoes, cucumber, bell pepper, and red onion.
  • Serve with lemon wedges for added zest. Enjoy your healthy meal prep!

Notes

Store any leftovers in an airtight container in the refrigerator for about 3-4 days. Can be reheated in the microwave or enjoyed cold.
