Peach Filling

  • 4 cups fresh peaches, sliced Use ripe peaches for the best flavor.
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Biscuit Crust

  • 2 cups all-purpose flour
  • 1/4 cup sugar For biscuit crust
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 3/4 cup milk Add slowly and mix until just combined.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium heat, combine the sliced peaches, sugar, lemon juice, cinnamon, and nutmeg. Cook for about 5-7 minutes, until the peaches are soft.
  • In a mixing bowl, combine flour, sugar, baking powder, and salt. Add the cold cubed butter and mix until crumbly. Stir in the milk until just combined.

Assembly and Baking

  • Pour the peach mixture into the skillet and drop spoonfuls of the biscuit dough on top.
  • Bake for 25-30 minutes or until the biscuit crust is golden brown.
  • Allow to cool slightly and serve warm.

Notes

Pairs beautifully with vanilla ice cream or whipped cream. To store leftovers, let the cobbler cool completely and cover with plastic wrap or an airtight container for up to 3 days.
